A mouthful of burning ecstasy: Paco's Tacos, Charlotte NC

Near South Park Mall in Charlotte, NC, sits the best Tex-Mex restaurant in town: Paco’s Tacos. Pictured above: what they call Tuna Carnitas, ancho-chile-crusted tuna bites, served one way on a tortilla and another way in a lettuce wrap. Though a touch salty on its own, the spice crust makes perfect sense if you make sure to get some avocado and slaw in every bite.



Pictured above: A taco trio featuring brisket, calamari, and chicken milanesa. Though the chicken and brisket were both tasty, the calamari stole the dish. It’s relatively rare in Charlotte to eat perfectly assembled calamari, with a light batter that doesn’t overwhelm the squid, and Paco’s nails it. Putting it in a taco, with a creamy lime sauce, is a winner.


Not pictured: the Paco’s Stuffed Jalapeno, which stole the meal. The server described it as a pepper that’d been sliced open, seeds scraped out, stuffed with a mix of Mexican cheeses, wrapped with a long slice of bacon, and flash fried, but I choose to think of it as a mouthful of burning ecstasy.
